summer salad

oh hey, i'm back.

Yeah, it's been a while...things have been crazy, crazy since getting back to the states, but i made something up last night that i'm incredibly excited about. In fact, I was so excited about it that Yasu and I had it for dinner two nights in a row!

But, I mean, really....how could you resist this beauty?


Salad: 
Butter lettuce
Radishes (3)
Cucumber (equal part to 3 radishes)
Watermelon

Dressing:
1 tbsp honey
Juice of 1 lemon
1 tbsp olive oil
salt & pepper 

For the dressing, mix all ingredients and whisk together. I went heavy on the honey and salt to give some good extra flavor to the produce. 

For the salad, clean and tear lettuce into bite sized pieces. We've enjoyed the salad with less lettuce than a typical salad. Thinly slice radishes and cucumber, we used a mandolin slicer. Top with a bit of sliced watermelon (I bought one of those little tubs of pre-cut watermelon from whole foods). 

Then dress! Then enjoy! We've served the salad with chicken and shrimp, and both were delicious.
